| A thermostat regulates the temperature by allowing or blocking the flow of coolant through your radiator. It's just going to keep the temperature lower when it's idling, running easy, etc. If your radiator is too small and cannot dissipate the heat as fast as your engine is producing it, a lower temperature thermostat is not going to help that since it will be running full open anyway at those temps. Also, you'd need an upgraded cooling system mostly if you track race. In drag racing you do not stay on the throttle long enough to really need an upgraded cooling system. It hardly is enough time to heat soak your engine. Top fuel dragsters do not even have radiators. If you want a cooling system that is able to cool an engine that's constantly running under heavy loads, you're going to need to increase the rate which your car dissipates the heat, and that means getting a better radiator.
